Granola - Vondelmolen

Granola

  • one big jar

Ingredients

  • 300 g oat flakes
  • 75 g grated coconut
  • 75 g walnuts (or other nuts, or a mix)
  • 75 g brown sugar
  • 75 ml maple syrup
  • 2 tbsp coconut oil
  • 3 slices of spice cake, cut into cubes
    (2 for the granola, 1 for the final step)
  • 40 g candied ginger, chopped
  • 10 g raisins

    Preheat the oven to 180 °C.

    Mix the oat flakes, the coconut and the nuts.

    Mix the brown sugar, maple syrup, coconut oil and spice cake cubes in a saucepan and let it boil. Stir until the sugar is dissolved.

    Add the sugar mixture to the dry ingredients and mix well. Mix in the chopped candied ginger.

    Divide the mixture over one baking sheet with parchment paper and let it roast 25 to 30 minutes in the preheated oven. Shake up the mixture partway through the cooking process. Let it cool and mix it with the raisins and remaining spice cake.
